- Berikut merupakan flow production susu cair Indomilk pada PT Indolakto Factory Pandaan: Sebelum melakukan tahapan proses produksi, mesin harus di bersihkan secara manual setiap pagi hari dan cleaning all process seminggu sekali, setelah mesin sudah siap lalu menyiapkan bahan baku SCI (Susu Cair Indomilk) seperti fresh milk, skim milk powder, anhydrous milk fat, gula, air, cocoa flavour dan bahan baku penunjang seperti vitamin, flavor, pewarna dan stabilizer yang telah dicek dan lulus uji mutu oleh Quality control (QC). Sebelum masuk ke dalam tahapan formulation, fresh milk telah dilakukan treatment dan disimpan didalam storage tank dengan suhu tertentu dan umur simpan 24 jam untuk mengurangi pertumbuhan bakteri dan juga menginaktivasi kerja enzim yang bisa merusak sifat fisik susu. Pada tahap formulating dilakukan standarisasi formula mixing dengan tujuan produk yang dihasilkan nantinya akan sesuai dengan target komposisi atau label yang disepakati dari perusahaan. Tahap Dumping dilakukan proses pemasukan mayor ingredient ke dalam mesin silo yang dilengkapi dengan filter untuk kemudian ditransfer ke dalam mixer Tahap Mixing dilakukan proses pencampuran bahan baku mayor dan minor, diawali dengan pengaliran larutan stabilizer kemudian dilakukan penambahan fresh milk dan recombined milk, gula, dan flavour Tahap Homogenisasi, dimana susu akan dilewatkan dibawah tekanan tinggi melalui lubang yang sangat kecil sehingga globula lemak susu pecah dan ukuran menjadi seragam. Kemudian dilakukan proses pasteurisasi / pemanasan susu secara HTST (High Temperature Short Time) Kemudian susu yang sudah melalui tahap pasteurisasi akan masuk ke storage vessel dilakukan proses aging / penampungan sementara dengan tujuan untuk mencegah bertambahnya load bakteri dan memantapkan flavor, colour dan total rasa pada produk Pada mesin filler dilakukan inject produk kedalam botol HDPE (High Density Polyethylene) serta proses penutupan botol / sealing dimana proses ini disupport supply botol dari mesin unscramble (mesin yang didesain untuk menangani botol plastik kosong untuk ditransfer ke mesin filling yang berlangsung secara otomatis, cepat dan efisien). Pada mesin loader, dilakukan proses loading sebelum proses sterilisasi terhadap produk hasil filling dan sealing yang lolos pengujian kebocoran dari leak detector kedalam keranjang Pada mesin sterillizer, dilakukan pemanasan produk keluaran dari tahap loading secara proses thermal pada suhu 121,1 C dengan dan waktu tertentu unuk membunuh bakteri dan pembusuk Pada mesin Unloader, dilakukan proses pengeluaran produk sterilisasi dari keranjang sterilisasi menuju ke labelling Pada mesin Labeller, dilakukan feeding labelling menggunakan shrink label yang berisikan informasi produk secara lengkap untuk selanjutnya dilakukan pengkodean pada botol Pada mesin Case packer, dilakukan proses pengecekan serta pengeliminasian/reject produk tanpa coding dan label. Produk yang lolos akan dikemas dalam carton menggunakan mesin packer Pada mesin Palletizer, dilakukan penumpukan product finish good ke pallet secara manual oleh operator mesin dengan bantuan forklift. Kemudian dilakukan sortir ke warehouse atas product finish good
- Sehingga, tujuan pada penelitian ini adalah menganalisa cara pengendalian jumlah cemaran mikroba pada tiap tahapan proses produksi susu cair indomilk sebagai early warning jika terjadi lonjakan load mikroba.
- 1. Faktor Lingkungan Kurangnya kebersihan lingkungan pada saat sebelum dan setelah proses produksi berlangsung sehingga adanya kemungkinan kontaminasi terhadap bahan baku maupun proses produksinya, seperti contoh masih terdapat hama yang lolos dari alat perangkap pada ruang produksi sehinga tidak menutup kemungkinan terjadinya kontaminasi di area produksi 2. Faktor Peralatan CIP Pencucian yang efektif dipengaruhi oleh empat faktor utama yaitu Waktu (Waktu kontak yang tidak cukup pada permukaan peralatan dapat mengakibatkan penumpukan kotoran, sehingga dapat menjadi kemungkinan terbentuknya biofilm oleh bakter-bakteri kontaminasi), Suhu (adanya ketidaksesuaian suhu dari air bilasan yang digunakan pada tiap siklus pencucian dapat mempengaruhi keefektifan kerja senyawa kimia dalam membersihkan zat pengotor; suhu yang terlalu tinggi dapat membuat zat pengotor sangat sulit untuk dibersihkan tetapi suhu yang terlalu rendah dapat mengurangi efisiensi pencucian sehingga pengotor masih tersisa di permukaan alat) Konsentrasi (adanya ketidaksesuaian konsentrasi bahan pembersih berpengaruh terhadap efektivitas dan efesiensi pencucian dalam mengurangi ikatan zat pengotor pada permukaan peralatan) Aksi mekanis (Kurangnya kecepatan aliran dari larutan pencuci (air bilasan, bahan pembersih, dan sanitizer) sehingga tidak terjamin waktu kontak yang cukup antara permukaan alat dengan larutan pencuci) PENGKONDISIAN PERALATAN Adanya ketidaksesuaian pengkondisian peralatan seperti suhu ataupun waktu pada proses pasteurisasi sedang berlangsung tidak dijaga sesuai target akan mengakibatkan mikroorganisme patogen tidak mati sempurna 3. Faktor Manusia Tidak menutup kemungkinan, Lonjakan cemaran mikroba berasal dari kontaminan pekerja yang kontak secara langsung baik yang disengaja maupun tidak, dengan bahan atau produk yang akan diolah. Seperti contoh pekerja tidak menerapkan SOP pada saat melakukan analisa mikroorganisme yaitu harus steril, serta kurangnya kesadaran pekerja terhadap sanitasi dan higiene personal (perilaku, kesehatan dan kebersihan individu). Berikut merupakan grafik yang menunjukkan terjadinya cemaran mikroba pada tiap tahapan proses diakibatkan ketiga factor tersebut
- Berikut langkah-langkah pengendalian untuk menekan laju cemaran mikroba : Hygenitas dari Bahan Baku dan Bahan Pembantu yang bertujuan untuk meminimalkan kontak dengan kontaminan dan meningkatkan keamanan produk. Sebagai contoh: menyimpan bahan baku pada gudang yang telah dilengkapi dengan kartu yang berisi keterangan status bahan, nama bahan, tanggal penerimaan, asal bahan, dan tanggal pemeriksaan dengan tujuan meminimalisir kesalahan penggunaan bahan. Selain itu, menyimpan fresh milk di storage tank dengan suhu yang ditetapkan agar mutu tetap terjaga, memberikan bimbingan terhadap KUD dan peternak dalam hal: menjaga kebersihan lingkungan peternakan; Perawatan kesehatan dan kebersihan hewan dengan melakukan pencucian pada puting sapi; Perawatan kebersihan peralatan pemerahan dengan cara Mensterilkan wadah hasil perahan 2. Sanitasi Karyawan, PT Indolakto menerapkan prinsip GMP (Good Manufacturing Practice) pada kesehatan dan kebersihan pekerjanya. Seperti contoh : Memakai hairnet pada wilayah GMP untuk melindungi rambut sehingga rambut tidak jatuh dan keringat tidak menetes pada saat proses pengolahan. Memakai masker pada wilayah GMP untuk menghindari apabila ada pekerja yang sakit dan juga menghindari kontak udara. Memakai baju khusus pada wilayah GMP dan sesuai standar GMP untuk melindungi dari kontaminasi. Pekerja dilarang menggunakan parfum, memakai perhiasan, dan menggunakan cat kuku. Setiap pekerja dilarang untuk merokok, mengupil, dan meludah selama berada di area perusahaan. Mencuci tangan dengan sabun dan penyemprotan alkohol sebelum melakukan proses pengolahan. Menggunakan sarung tangan untuk area produksi tertentu. Menggunakan sepatu khusus pada area produksi. 3. Sanitasi Peralatan, Alat-alat sebelum dan sesudah tahap pasteurisasi yang dapat disanitasi menggunakan proses CIP (Cleaning in Place) dengan tujuan untuk mengurangi jumlah limbah cair dan meningkatkan efisiensi produksi. Tahapan CIP yaitu: Pembilasan dengan air bersih selama 5 menit Pencucian secara sirkulasi dengan larutan basa 1,5-2,0% selama 15 menit, suhu 70-80˚C. Pembilasan dengan air bersih selama 10 menit. Pencucian dengan larutan asam konsentrasi 0,5-1,2% , suhu 60- 70˚C selama 15 menit. Pembilasan dengan air bersih selama 10 menit Pembilasan dengan hot water selama 15 menit 4. Sanitasi Lingkungan Kerja Kebersihan dari lingkungan kerja ini perlu dijaga terutama pada ruang produksi dengan tujuan untuk menghindarkan produk dari kontaminan dan memberi kenyamanan bagi pekerja. Beberapa bentuk sanitasi ruang produksi yaitu perawatan dinding, perawatan lantai dan pencegahan serangga yang masuk pada area produksi dengan memasang alat pembasmi serangga.

Pada mesin loader, dilakukan proses loading sebelum proses sterilisasi terhadap produk hasil filling dan sealing yang lolos pengujian kebocoran dari leak detector kedalam keranjang Pada mesin sterillizer, dilakukan pemanasan produk keluaran dari tahap loading secara proses thermal pada suhu 121,1 C dengan dan waktu tertentu unuk membunuh bakteri dan pembusuk Pada mesin Unloader, dilakukan proses pengeluaran produk sterilisasi dari keranjang sterilisasi menuju ke labelling Pada mesin Labeller, dilakukan feeding labelling menggunakan shrink label yang berisikan informasi produk secara lengkap untuk selanjutnya dilakukan pengkodean pada botol Pada mesin Case packer, dilakukan proses pengecekan serta pengeliminasian/reject produk tanpa coding dan label. Produk yang lolos akan dikemas dalam carton menggunakan mesin packer Pada mesin Palletizer, dilakukan penumpukan product finish good ke pallet secara manual oleh operator mesin dengan bantuan forklift.
