Genetic engineering techniques can shorten breeding programmers significantly because they allow for the identification
and isolation of genes coding for desired traits, & for the reincorporation of these genes into the animal genome.
According to Lawrie (1991) several economically important traits in meat animals are heritable to some degree & can

8. Scale of the INF program and the extensive list of traits have resulted in genetic correlations between traits with high precision (low standard errors).
Some of the most important correlations are outlined in.
Genetic correlation between iron & myoglobin concentrations was extremely high suggesting these parameters effectively describe the same genetic trait in lambs.
Iron concentration is important from a nutritive value point of view (Fsanz, 2012) & myoglobin concentration clearly affects the colour of meat.
The strength of the correlation between IMF & SF5 supports similar studies in beef cattle (Reverter et al., 2003) & further underpins the importance
of IMF as an eating quality trait in prime lambs. IMF was also correlated with several of the colour parameters, but these associations appear complex.

14. Eating quality traits that are heritable
Intramuscular fat, SF5 & retail colour (hue, lightness, redness -measured after 3d of simulated retail display) all had heritability estimates > 0.25.
The pH of the loin 24 h post slaughter (pH24LL, an estimate of ultimate pH) had a very low heritability at 0.07& DHA had the highest
heritability (0.22) of all the LCFAs measured.
The composition of the fatty acids in meat is very sensitive to diet (Ponnampalam et al. (2014) & therefore manipulation through genetic
selection would appear unattractive.
A potential exception might be for the DHA content of muscle which is insensitive to diet, unlike the other omega-3 LCFAs (Scollan et al., 2005).
IMF, SF5, & retail colour stability & perhaps DHA could all be considered either directly or indirectly in sire breeding programmers.
This in turn justifies the inclusion in future resource flock protocols for ongoing verification of genomic breeding values of these traits.

27. Effect of gender (male, female, castrated) is mainly related to the quantity of fat deposited, deposition site, growth rate & carcass yield.
Carcass attributes are more affected by gender; likewise, females are more affected than males due to their higher precociousness, whereas
steers maintain an intermediate position.

Panea et al., (2011) studied the effect of gender on instrumental and sensory quality & on the appraisal of meat derived from the Spanish

38. Oxidative Capacity
Genotypic factors had significant effects on oxidative capacity.
An increase in intramuscular fat is linked to an increase in oxidative capacity that is independent
of its association with (post-weaning c-site fat depth) or whole body adiposity or muscularity.
Oxidative capacity also increased with age however the effect was more evident on myoglobin
concentration than (Isocitrate dehydrogenase) activity. (Kelman et al., 2014).
Genetic improvement of meat quality traits is a possibility for tropically adapted breeds given the
moderate heritabilities, adequate phenotypic variance, generally favourable genetic correlations between
traits, and little evidence of genotype by environment interactions, effects on oxidative capacity.(Estévez et al., 2003)
