Easy Diet Recipes
The last thing you want to fuss over when you’re on a diet is to spend too much time
preparing it. You already have a lot on your mind (and literally less on your plate) like
counting calories, reducing the fat, increasing the fiber, etcetera etcetera that you’ll
want to just dish up your meal in a flash. This doesn’t mean that your food shouldn’t
be great tasting however.

fact that you have to spend quite a bit more than your normal shopping trip to the
supermarket. Organically produced fruits and vegetables, grass-fed beef, free range
chicken and eggs can cost double or even triple their conventionally produced
counterparts. This is because it takes more time, effort in growing things the natural
organic way. And the yield of crops or the size and weight of animals grown this
manner is not as abundant. The upside to this though is you get the food the way
Mother Nature intended you to eat it.

amount of it is brimming with fiber, protein, vitamins and minerals. The challenge is
to find it in the supermarket!

Passion fruits with wild strawberries

Preparation Time: 15 minutes
Cooking Time: 15 minutes
Recommended Wine: Muscat de Rivesaltes

Ingredients:
18 passion fruit, 1 cup whipped cream, 7 tablespoons sugar, 5 ½ tablespoons
powdered sugar, 6 teaspoons strawberry sauce, 0.77 lbs. (about 1 ½ cups) wild
strawberries

Preparation Instructions:
Put the passion fruit, reserving the pulp and the emptied fruit “shells.” Reduce the
sauce with 7 tablespoons sugar, until obtaining a genuine unctuousness (an oily
liquid). Cool. Prepare the cream with powdered sugar. Add the passion fruit extract
you obtained earlier, reserving 6 teaspoons for later. Place the emptied passion fruit
shells in dessert bowls (3 per person) and pour a spoon of strawberry sauce into the
bottom of each. Place the wild strawberries on top of this, then add the beaten cream.
Decorate with the passion fruit and strawberry sauce. Serve on a dish covered with
tablecloth, accompanied with a sugared or other dry biscuit. Note: The wild
strawberries may be replaced with strawberry dice or raspberries. This dessert can be
prepared in advance, but it must be stored cold.
10 Minute Guacamole




Fresh guacamole is easy and quick to make, and tastes better than store bought. Try it
not only for chips, but for raw vegetables or as a “sauce” for steak.

Servings: 4
Cooking Time: 10 minutes
Difficulty Level: Easy

Ingredients:
3 ripe avocados, 2 tablespoons freshly squeezed lime juice, 1 tablespoon sour cream, 1
tablespoon olive oil, ½ teaspoon cayenne pepper, 3 green onions, chopped fine, 2
cloves garlic, chopped fine, Salt

Preparation Instructions:
Cut one avocado in half lengthwise. Stick the point of a knife in the pit and pull up to
remove the pit completely. Use a spoon to scoop out the flesh of the avocado and put
it in a bowl. Repeat with the remaining avocados. Add the lime juice to the removed
avocado flesh. Mash the mixture with the back of a fork. Stir in the sour cream, oil,
cayenne pepper, green onions, and garlic. Season with salt. Mash again with the back
of a fork; the mixture should not be perfectly smooth. Serve immediately or cover
with plastic wrap, refrigerate and serve within 2 hours.
Almond Galette with Red Fruits




Chef Gerard Vie prepares almond galette with red fruits. Preparation and cooking time
is 20 minutes. Galette is, in fact, a French term signifying a flat cake that can be either
sweet or savory. They can be made from puff pastry, yeast raised dough like brioche,
or with a sweet pastry crust. The toppings can vary also; ranging from fresh, candied
or dried fruits, creams, nuts, and jams for sweet galettes, with savory ones being
topped with an assortment of meats and/or cheeses.

Servings: 4
Preparation Time: 20 minutes
Cooking Time: 20 minutes
Recommended Wine: Loupiac

Ingredients:
Almonds, 4.48 oz. (about ½ cup) sugar, 7 tablespoons flour, 5 eggs, 1 lb. raspberries or
seasonal red fruits, 3.5 oz. (7 tablespoons) thick cream (creme fraiche), 3.5 oz. (7
tablespoons) creme patissiere (vanilla flavored custard filling for pastries and cakes)
raspberry sauce

Preparation Instructions:
Mix the almonds, sugar, flour, and eggs, creating a dough. Spread this dough as thin as
possible in a cake form. Bake it in a preheated oven for about 5 minutes. Meanwhile,
mix the creme patissiere with an equal amount of cream. Place the almond cake in the
middle of a plate. Pour the cream on one side of the cake. Top with red fruits. For
decoration, add some mint leaves, raspberry sauce, and berries. You may serve the
rest of the cream in a gravy bowl. In another bowl, serve the rest of the raspberry
sauce.
