1. Seafood Recipes to Prepare on
Holidays
The Christmas Celebration is not complete without the delicious and extravagant food that are being
prepared. However, some guests are sensitive to red meat such as pork or beef. An answer to this
complicated problem is to make seafood dishes that are healthy and pleasant at the same time. Here are
some of the best suggested seafood recipes to cook for the jolly season.
Grilled Shrimp in Sweet Marinade
This is a very simple and easy marinade that makes your shrimp the best in town, even without sauce.
Ingredients:
3 cloves of minced garlic, 1/3 cup olive oil, ¼ cup tomato sauce, 2 tablespoons chopped fresh basil, ½
teaspoon salt, ¼ teaspoon pepper, 2 pounds peeled fresh shrimp
Instructions:
Mix the garlic, olive oil, and tomato sauce. Season with salt and pepper, you may add basil if you wish
to do so. Add the shrimp to the bowl and stir with the mix until all the pieces are coated evenly. Once
done, place the prepared marinade in the refrigerator for half an hour to an hour. Remember to stir once
or twice in between to avoid the shrimp from sticking together. When the marinade is ready, grill your
shrimp for 2 to 3 minutes per side or until the shrimp’s color become opaque. Add in the thrill by
placing your shrimps on skewers.
2. Cioppinno
Cioppinno literally means “to chop” from the land of Genoa, usually prepared with the fresh catch of
the day. It is a type of seafood stew, perfect for the cold Christmas breeze.
Ingredients:
¾ cup butter, 2 onions, chopped, 1 bunch fresh parsley, chopped, 2 cans stewed tomatoes. 2 cans
chicken broth or 2 chicken broth cubes, herbs and spices such as basil, thyme and oregano, 1 cup water,
½ kilo peeled large shrimp, 18 small clams, 1 ½ cups crabmeat
Instructions:
Dissolve the butter over a medium-low heat in a large stockpot. Mix the garlic, onions and parsley with
occasional stirring until the onions are soft. Add the stewed tomatoes, chicken broth and all the herbs
and spices that you prepared. Also pour in the water, you may also add white wine for more taste. Mix
well, cover and boil for 30 minutes. Once done, stir in the shrimp, crabmeat and clams. You may also
add fish, scallops and mussels if you desire to do so. Take the soup to simmer. Serve this stew with
crusty bread.
3. Seafood Chowder
Top your holiday seafood menu with this creamy soup that's full of flavor! Your family will be sure to
ask for more.
Instructions:
1 1/2 cups evaporated milk, 1 container cream cheese, 2 cloves garlic, minced, 1 can cream of
mushroom soup, 1 cup chopped green onions, 1 cup sliced carrots, 1 can whole kernel corn
(undrained), 1 1/2 cups chopped potatoes, 1 teaspoon dried parsley, 1/2 teaspoon ground black pepper
1/2 pound shrimp, 1/2 pound crabmeat, 1/2 pound calamari tubes
Instructions:
Mix ½ cup evaporated milk, garlic and cream cheese in a large stockpot on low heat. Mix until all the
ingredients have blended. Dispense in soup, green onions, corn with liquid, carrots, potatoes, parsley
and the remaining one cup milk. Season with salt and black pepper. Seethe the chowder in 25 minutes.
Mix in the shrimp, crabmeat, and calamari. Turn off stove when the seafood is already thick.
Remember not to bring the chowder to a boil as it will dry up the stew.
