To boost the amount of iron in your diet, try these foods:
Red meat
Egg yolks
Dark, leafy greens (spinach, collards)
Dried fruit (prunes, raisins)
Iron-enriched cereals and grains (check the labels)
Mollusks (oysters, clams, scallops)
Turkey or chicken giblets
Beans, lentils, chick peas and soybeans
Liver
Artichokes

Artichokes in barigoule of lapereau with garlic
Ingredients
2 livers of young rabbits
12 purple artichokes
1 rabbit stuffing
1 egg
3 1/3 oz. olive oil
16 garlic cloves
5 1/2 oz. carrots
1 onion
8 crystallized tomatoes
1 savory bouquet of herbs
3 1/2 oz. shallot
2 cups white wine
1 bunch chervil
Preparation Instructions
1. Remove the leaves from the artichokes.
2. Chop the liver of the young rabbits and season with salt, pepper, and shallot.
3. Add a beaten egg and a spoon of chopped chervil.
4. Stuff the artichokes and cover with oil and wine.
