Orlando is totally committed to the development of his own brand of Caribbean cooking. ‘Share the love Cuisine’,
is a cooking style, coupled with a Caribbean cultural experience. He plans to achieve this by using local island
products, and organic fruits and vegetables grown by local farmers.
3. A TASTE OF ORLANDO’S HISTORY
Born in England, Chef Orlando has
been promoting caribbean cuisine all
his life. He has set up restaurants serving
his own unique brand of Caribbean
food in places such as Singapore,
Miami and London.
Arriving in St. Lucia 13 years ago
intending to do 2 weeks consultation,
he is still here! After 13 years at Ladera,
it is now time for his own restaurant.
4. VISION
Orlando’s vision is to bring Caribbean
food to the world, and to bring the
same standing that French, Asian and
Chinese cuisines have globally.
He also believes in involving the local
community by not only collaborating
with farmers and fishermen and
buying local produce in but by raising
awareness of the health benefits
of the local produce.
5. ORLANDO’S RESTAURANT
Orlando’s is situated in the historic
town of Soufiere, facing the sea and
surrounded by the towering mountains
that make St. Lucia’s scenery one of
the most beautiful in the world, with
a view of Petit Piton.
The restaurant is set in a courtyard with
it’s own mango tree and is entered
through an arched gateway, giving it a
truely Caribbean feel.
6. M e t h o d
In a large bowl whisk together the juices and
herbs, whisk in the oil and vinegar then add
chopped fruit and vegetables. Season to
taste, add hot pepper sauce to taste then
chill until ready to serve.

4 cups Tomato Juice
1 medium cucumber (sliced)
1 Red Onion (finely chopped)
2 Spring Onions (chopped)
1 tbsp Coriander (cilantro, chopped)
1 medium Carrot (finely diced)
3 cloves Garlic (minced)
3 Tomatoes (peeled and diced)
3 tsp Balsamic Vinegar
5 tbsp Virgin Olive Oil
2 cups Pineapple juice
¼ cup Basil (finely chopped)
¼ Pineapple (diced)
½ Honeydew Melon (diced)
¼ small Watermelon (diced)
1 tblsp Parsley (chopped)
¼ cup Celery (chopped)
Hot Pepper sauce, salt & pepper

7. TI MANJE
The Ti manje cuisine (small plate of
the Caribbean my dishes combine
Caribbean ingredients with my own
unique twist to achieve a casual Carib
dining experience, we will be using
the finest local ingredients available,
organic where possible.
Orlando’s not only offers Carib dining
but has a bar, is available
for weddings, private parties and
cooking demonstrations.

Coming soon accommodation on
a bed and breakfast basis. So why
not pay us a visit to the beautiful
town of Soufriere, with the beach
and town centre on the doorstep
and the natural attractions of
the sulphur springs and
Diamond Falls close by.
