Ingredients:
• 600 G of raspberries
• 6 egg yolks
• 8 white in snow
• 3 brandy Cl of wild raspberries
• 100g (4 C. with S) of caster sugar
• 2 bourbon vanilla sticks
Decoration:
• 8 mint sheets

Method:
Assemble the egg yolks with the 2/3 of sugar, in ribbon, with the beater, add seeds of the 2 vanilla beans cut into 2,
brandy and, in the last, the white of Å“ufs in snow tightened well, with the rest of sugar. Lay out raspberries in the
middle of each of the 4 dinner plates, in dome, mask raspberries with the device with soufflé, while smoothing with the
spatula, and pass the soufflés to the oven during 12 minutes, with 160 degrees.
