It seems there are more salad recipes available every year. It is a good thing that salads can be classified into
different types, so you can narrow down your choices. There are six basic types of salads: green, vegetable,
bound, entree, fruit, and dessert. Most people are familiar with green and vegetable verities. Bound salads
include any type made with a thick sauce such as potato salad, chicken salad or macaroni salad. Entree salads
include Caesar, Cobb, and Chef Salad. Fruit salad is self-explanatory, and dessert salads are often made with
gelatin or whipped topping.
When you choose a salad, it helps to know what kind you want to serve. Green salad is a wonderful side dish.
It can even become a main dish in some cases. Vegetable salads include three-bean salad or any salad that is
made of any vegetables other than lettuce.
Dessert salads -(saladehomard) have developed into an art form in the northern Midwest. With recipes for
Snickers Salad, Cookie Salad and many other similar recipes, dessert salads are becoming very popular at
potlucks and large gatherings.
Recipe for Spinach and Pasta Salad
This colorful dish can be served as an appetizer or a full meal.
What You Need:
9 ounces linguine
7 ounces pesto sauce
5 cups fresh spinach leaves, shredded
1 cup fresh tomato, chopped
1 cup red onion, thinly sliced
1/4 cup pine nuts, toasted
3 Tablespoons lemon juice
1/4 teaspoon salt
How to Make It:
Cook the linguine according to directions on the package.
Rinse in cold water and drain.
Mix the pasta, spinach, tomato, onion and pine nuts in a salad
bowl.
Mix the pesto sauce, lemon juice, and salt in a small bowl. Add the dressing to the pasta mixture. Toss well to
coat thoroughly. Serve immediately or chill until needed.
